If you like full bodied red wine and strong cheese then this is the pairing for you. Somerset Solstice is a strong, fairly soft washed-rind cheese. The texture is somewhat fudgy, the nose pungent and the flavour strong, with a citrusy twist. We love it with Rioja Reserva, Vega del Rayo 2017, an intense Rioja with berry, spice and liquorice on the palate, strong enough to not only stand up to the Somerset Solstice, but work with it for a wonderful pairing.
